PAIRS,
THE NEBBIOLO WINE

Our Story
Sometimes the best pairs come together by chance. Ours began with a pair of doodles and a meeting at the dog park, a small moment that sparked a connection and grew into a lifelong friendship.
We bonded over wine and art: Kelly’s photography and Quynh’s paper flowers. We have celebrated and championed one another’s work for over a decade. Together, we paired our strengths and grew our businesses from our backyard in Seattle to reach audiences worldwide.
Along the way, we supported fellow women entrepreneurs. In 2018, Kelly sought a female winemaker for her community events. After attending a tasting of 15 local women winemakers, she was immediately drawn to Pam, whose wines were approachable and delicious, but even more so because of her passion for bringing people together. A new friendship began, and one year later, Kelly teamed up with Pam and Quynh to host the first Wine Pairing Class. Since then, we’ve been sharing the joy of wine and connection year after year.
Kelly and Quynh love gathering friends and sharing pairings of food and wine. These small dinners turn into big memories that last a lifetime.
We invite you to open this beautiful Nebbiolo and create a perfect pairing. Share it over a meal with friends. Fill the table with conversation, laughter, and connection.

Our Pairs Nebbiolo opens with a breath of roses and violets, a fragrance that feels like walking into a garden at dusk. On the first sip, bright red cherries and wild raspberries greet you, followed by a whisper of spice and a touch of earth. The tannins are firm yet graceful, giving structure without losing elegance, while lively acidity keeps every sip refreshing. As the wine lingers, subtle notes of truffle and dried herbs appear, inviting you to take another taste.
This is a wine that evolves in the glass, unfolding like a story told around a dinner table. It’s vibrant, layered, and made for long meals filled with laughter, conversation, and the kind of memories that linger long after the bottle is gone.

Perfect Pairings
Pairs Nebbiolo pairs well with simple bites, but it also shines alongside a full meal. Its bright cherry fruit, floral notes, and earthy depth make it one of the most versatile wines at the table.
Meals Made for Sharing:
- Fresh pasta with tomato and basil for a classic, comforting match
- Wild mushroom risotto that echoes the wine’s earthy tones
- Herbed roast chicken with crackling skin giving way to succulent bites and savory drippings
- Sharp cheeses with marinated olives for a light yet flavorful spread
- Your favorite takeout, shared in pajamas with friends, because wine should feel easy and joyful
For the Holidays:
Pairs Nebbiolo belongs at the Thanksgiving table. Its lively acidity balances rich sides like stuffing, gravy, and sweet potatoes, while its floral fruit notes complement turkey and roasted vegetables. With every sip, it brings the meal and the people gathered around it closer together.

Gather & Pair
Every bottle of Pairs is an invitation. Gather friends, set out a beautiful spread, and let the wine bring everyone together. Our Nebbiolo shines in good company, especially when paired with small bites as thoughtful and flavorful as the conversations around your table.
Cheeses to Love:
- Creamy Taleggio with its gentle tang
- Nutty Fontina Val d’Aosta

- Caramel-rich Aged Asiago
Olives to Savor:

These flavors bring out the best in Nebbiolo, showcasing bright cherry, floral, and earthy notes that evolve with every sip. Add good bread, a drizzle of olive oil, and laughter at the table, and you’ve created the kind of evening that lingers long after the plates are cleared.
Build Your Pairs Charcuterie Board
Over the summer, we invited a few close friends to join us in the backyard on a golden evening. The table was simple: a wooden board filled with aged Parmigiano, silky prosciutto, buttery Castelvetrano olives, and a bowl of dried figs. We opened a bottle of Pairs Nebbiolo, and suddenly the ordinary became extraordinary. Each sip sparked new flavors, each bite brought laughter, and the night stretched into stories we still talk about today. That’s the magic of a charcuterie board paired with a wine made for gathering.
Here’s the charcuterie board I would put together to enjoy Pairs:
Cheeses
☑ Parmigiano-Reggiano (nutty, crystalline)
☑ Taleggio (soft, tangy)
☑ Aged Asiago (caramel-rich)
Cured Meats
☑ Prosciutto di Parma (silky, delicate)
☑ Bresaola (lean, earthy)
☑ Soppressata or Finocchiona (spiced with fennel or pepper)
Olives & Accents
☑ Castelvetrano olives (buttery, bright)
☑ Gaeta olives (tangy, briny)
☑ Roasted red peppers (sweet, smoky)
Nuts & Crunch
☑ Marcona almonds (buttery, lightly salted)
☑ Toasted hazelnuts (earthy, warm)
☑ Grissini breadsticks (crisp and light)
Sweet Touches
☑ Dried figs (honeyed depth)
☑ Candied orange peel (zesty sparkle)
☑ Dark chocolate shards (62% and above – bold contrast)
Set it out simply. Pour a glass of Pairs Nebbiolo. Let the conversation and laughter do the rest.
Raise your glass, share the plate, and savor the moment, Pairs celebrates friendships, stories, and the joy of now.
